7 Layer Cookies
Welcome to Day 3 of my 25 Days of Christmas! If you’re just joining us, remember to check out Day 1 and Day 2 for some fun holiday inspiration! Today, I want to tell you about my FAVORITE Christmas cookie. When I was growing up, my mom used to make these amazing 7 layer cookies for us. We looked forward to them every single year. Of course, she only ever made one pan, and they were usually the first things gone, as they were everyone’s favorite. You can imagine why.
Not technically a cookie, these ooey gooey bars of goodness are like a dream of what all holiday candy should be.
Here’s what you’ll need:
1/2 C unsalted butter, melted
1 1/2 C graham cracker crumbs, crushed
14 ounce can EAGLE BRAND® Sweetened Condensed Milk
1 C semisweet chocolate morsels
1 C butterscotch morsels
1 C white chocolate morsels
1 1/3 C flaked coconut
1 C sliced almonds
Directions:
Heat oven to 325 degrees. Spray a 13×9-inch baking pan with no-stick cooking spray.
Mix together the graham cracker crumbs and butter with your hands. Using your hands press the mixture into bottom of the pan.
Spoon the sweetened condensed milk evenly over crumb mixture.
Add a layer of chocolate chips. Then the butterscotch chips. Then the white chocolate chips.
Spread the shredded coconut. Lastly sprinkle almonds on top.
Press down firmly with a fork.
Bake at 325 degrees for 25 minutes or until lightly browned.
Allow to cool completely. Cut into bars.
The wonderful thing about these bars is you can change out some of the ingredients if you wish. Don’t like butterscotch? Try peanut butter morsels or even pumpkin! Don’t like almonds? Try some chopped pecans or cashews!
You have GOT to try these cookie bars this holiday season. I can’t imagine Christmas without them! And they are SURE to please all of those with a sweet tooth!
