It’s summer! Well, almost. Close enough really. And you know what summer means, right?! Lots of fresh salads to go with BBQ season! And what better way to combine the two than in this awesome BBQ Ranch Chicken Salad? I will admit, it is super yummy, and it’s SO easy to put together. It’s the perfect light lunch or dinner when the weather is nice. I actually first tried it at a restaurant when I was on a hike and ran across a cool mountain lodge cafe. I am not usually a fan of BBQ on salad, but this was soo good.
If you want a tasty treat this season, try it out. It’s DELICIOUS.
You can add any of your favorite salad fixins, but here’s how I make mine.
4 C finely chopped mixed greens
1 C shredded chicken breast
1/2 C rinsed black beans
1/2 C chopped tomato
1/2 C shredded cheese
Throw the greens into a bowl and then add the beans, tomato and cheese. Place the shredded chicken breast right on top.
For the dressing, mix 1/2 C of your favorite BBQ sauce and 1/2 C of your favorite ranch dressing. Then drizzle it over your salad. It could NOT be simpler! I love to serve mine with homemade buttermilk biscuits (click for recipe).
As I said, you can add whatever you want to the salad. I love using avocado, cucumber, black olives, etc. Change it up and you’ll never be bored!
