Sometimes, there is nothing better than a grilled cheese sandwich. Because cheese. It’s a staple for kids, and a guilty pleasure for moms everywhere. But once in a while, I feel the need to jazz it up and make a more “grown up” version that I feel I can serve to my husband without him giving me the side-eye.
This is SO delicious, and it doesn’t take much longer than the regular version. Have I mentioned it’s DELICIOUS?!
Here’s what you’ll need:
4 slices honey wheat bread
2 tsp garlic butter (or regular butter if you prefer)
8 slices cheddar cheese (sliced off the block)
2 TBSP shredded Parmesan
1 medium sweet onion (I like Vidalia)
1 tsp olive oil
1 TBSP balsamic vinegar
Basically, you want to slice up the onion and fry it in a bit of olive oil until they are nicely golden brown. Add in the balsamic vinegar and stir, continuing to cook for another minute or so. Be careful it doesn’t burn!
Next, butter your honey wheat bread with the garlic butter (or regular butter if you’re not a fan) and place two slices butter side down in your frying pan over medium heat.
Add four slices of cheddar to each slice and then spoon your onions over the cheddar. Sprinkle the onions with the shredded Parmesan.
Finally, add the other two slices of bread, butter side up.
Cook until the cheese begins to melt and the bottom slices of bread are a nice golden brown. Flip the sandwiches over and cook the other slice of bread, making sure to gently press down so that the cheese melts evenly and the both cheeses mingle together through the onions.
Once it’s all done, plate it up and cut in half. Makes two servings.
Seriously, this is one AWESOME sandwich. It’s the tiniest bit sweet from the bread and the onions, and the two kinds of cheese give a tart and salty quality. It just WORKS.
