BLT Pasta Salad
Is there anything in this world half as good as a BLT? Smoky bacon, crisp lettuce and juicy tomatoes come together in such a unique flavor combination that you can’t HELP but love it. Heck, whether you are a traditionalist or one who goes for lower fat turkey bacon or even the vegan variety, there is something about it that makes your mouth water. Amirite?
I recently shared the completely amazing BLT Pizza with you guys, and today I wanted to give you another stunner – the BLT Pasta Salad!

Ingredients
16-ounces bowtie pasta
16-ounces thick cut bacon
1 cup mayonnaise
2 tablespoons red wine vinegar
1 cup chopped tomatoes
2 green onions, sliced
1/2 teaspoon black pepper
Salt to taste
2 cups lettuce, chopped
Italian parsley, optional

Instructions
Cook the pasta according to the directions on the package, rinse well with cold water, and set aside to drain.
While the pasta is cooking, chop up your bacon, and add it to a skillet. Cook the bacon until it’s crisp, remove it from the pan, and spread it out on paper towels to drain the excess grease.
Roughly chop the tomatoes and add them to a colander to drain the excess liquid.
Add the mayonnaise, vinegar, tomatoes, green onions, and pepper to a bowl. Stir well to combine.

Add the bacon to the dressing and stir to combine.

Add the pasta and stir until evenly coated.

Taste the salad and adjust the salt to your liking.
To serve immediately, add the lettuce and stir to combine. If you’re not serving this right away, wait until just before serving to add the lettuce.

If you love the flavors of a BLT, you’ll love this pasta salad! Just like with our BLT pizza, we kept the ingredients simple to give it a classic BLT flavor.

Notes:
The lettuce will start to wilt once it’s added to the pasta, so be sure to wait until just before serving to add it.
To make this a little lighter, you could use turkey bacon and light mayonnaise.

Although you might lose some of the classic BLT flavors, some yummy additions to this would be diced red onion, black olives, and/or chopped peppers.
This is perfect for large gatherings, BBQs, or potlucks! And be sure to bring some extra copies of the recipe because everyone will want it 😉

This looks so yummy; I tried making a BLT pasta salad a year or two ago but it didn’t come out that well. I’m pinning this recipe to try.
This looks sooo good. I love BLTs quite a bit. I’ve never considered making it into a pasta bowl. This is a such a great idea.
