Celebrate Cinco de Mayo with Delimex

My family has always celebrated Cinco De Mayo. It’s one of the most fun “holidays” to observe, and as someone who LOVES Mexican food, I can definitely say it’s one of my favorites. Funnily enough, my sister’s birthday is May 5th. Like me, her birthday always seemed to involve some sort of themed party (my birthday is at the end of January, and I was always forced into having my party during the Super Bowl – which meant a football cake!). But when you get to have amazing party food like guacamole, salsa and Delimex taquitos, there’s really no room for complaint!

In fact, I have one of the BEST recipes for Guacamole, and it is the perfect accompaniment for your taco bar if you are holding a Cinco De Mayo party. It takes ten minutes, TOPS, and it is out of this world.

Here’s what you’ll need:

3 avocados – peeled and pitted
1 lime, juiced
1 teaspoon salt
½ cup diced onion
3 tablespoons fresh cilantro, chopped
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch of cayenne pepper

Directions:

Place avocado in a medium bowl, and use a sharp knife to slice it into chunks.

Add lime juice, salt, cilantro, tomatoes, cayenne pepper and garlic into the bowl.

Use a fork to gently combine ingredients, being careful not to over mix. Refrigerate for 45 minutes to combine flavors, and then serve.

This is such a great dip for anyone who loves avocados. It’s not too spicy or too bland. It’s just perfect.

If you’re setting up a fun taco bar buffet, you’ll want this as one of the main attractions. We set out our Delimex taquitos, tamales and tacos with our guacamole, a spicy sriracha ranch dip, some sour cream, cheese, green onions, tomatoes and lime.  You can add themed drinks to go along with it, and we always cook up some churro bites for dessert!
