If you’re like me, you really enjoy a nice salad, but you might also wish that they were a little more filling. Enter the Creamy Quinoa Salad with Mango. If you’ve never tried quinoa (pronounced keen-wah), this is a great introduction. It is a very versatile staple in our house, and we use it for dinners, snacks and desserts with no issue. But there’s something about this creamy, slightly spicy and very flavorful salad that just DOES IT for me.
It uses two kinds of quinoa, which is mostly just for the look rather than the flavor. The spicy jalapeno mixes well with the tart lime, sweet tomatoes and yummy mango. And the avocado gives it that creamy consistency that just makes you smack your lips together.
The final result is really nothing short of extraordinary. It is the perfect summer salad, and it’s a sure crowd pleaser. Probably best to give the kids something with a little less bite to it, though, unless they are used to it.
1⁄2 C Red Quinoa
1⁄2 C White/Regular Quinoa
1 tsp Salt
2 Avocados, diced
3 Cloves Garlic, minced
2 Limes, juiced
1 Mango, diced
2 Roma Tomatoes, diced
1⁄4 Red Onion, diced
8-10 Sprigs of Cilantro leaves, minced
1⁄2 tsp Ground Cumin
1⁄4 tsp Cayenne Pepper
1-2 Jalapenos (canned or fresh), seeded and minced
Bring Quinoa to boil in 2 cups of water and 1⁄2 tsp Salt then simmer covered 15 minutes. Let cool.
In a large bowl mash the Avocados, Garlic, Salt and Lime juice with a fork until the Avocados are smooth to barely chunky depending on your preference.
Mix in the Mango, Tomatoes, Onion, Cilantro, Cumin, Pepper and 1 of the Jalapenos. Adjust the amount of Salt and Jalapeno to taste.
Stir in the Quinoa and refrigerate or serve room temperature.
