Creamy Quinoa Salad With Mango

Creamy Quinoa Salad with Mango

If you’re like me, you really enjoy a nice salad, but you might also wish that they were a little more filling. Enter the Creamy Quinoa Salad with Mango. If you’ve never tried quinoa (pronounced keen-wah), this is a great introduction. It is a very versatile staple in our house, and we use it for dinners, snacks and desserts with no issue. But there’s something about this creamy, slightly spicy and very flavorful salad that just DOES IT for me.

Creamy Quinoa Salad with Mango Ingredients

It uses two kinds of quinoa, which is mostly just for the look rather than the flavor. The spicy jalapeno mixes well with the tart lime, sweet tomatoes and yummy mango. And the avocado gives it that creamy consistency that just makes you smack your lips together.

The final result is really nothing short of extraordinary. It is the perfect summer salad, and it’s a sure crowd pleaser. Probably best to give the kids something with a little less bite to it, though, unless they are used to it.

Enjoy!

  1. You had me at quinoa because it’s my favorite, but I’m a bit apprehensive because of the avocado, I’m not a fan, but I may have to try this anyway!
