I am such a sucker for a great salad. My favorites utilize fresh vegetables and a combination of hot and cold. I love to sauté veggies to really bring out their flavors. But sometimes I’m not in the mood for chicken or caesar dressing, and I just want a really fresh but comforting meal. This is perfect.
The recipe calls for endive, which can get expensive. I managed to get three bulbs on sale for 99 cents, but generally that amount might run up to $4! And I used all of it in this recipe. So if you want to save money, you can leave it out. Really, you can use whatever veggies you think would be nice. I decided to use a leek where you might prefer an onion. It’s all about what you think works.
