Gluten Free Peanut Butter and Banana Oatmeal Bars

If you have kids like mine, you may find that they LOVE sweet treats. They are especially fond of peanut butter and chocolate, and when I occasionally buy them a new snack at the store, they will scream and tantrum and demand more until the whole box is gone. It’s a nightmare. I don’t mind giving them treats once in a while, but it’s so much better when you can make them at home and know exactly what goes into them.

This recipe for Gluten Free Peanut Butter and Banana Oatmeal Bars isn’t exactly “healthy,” but it is definitely better than the preservative-laden stuff you’ll find in stores, AND it tastes better, too! And if you are looking for a really easy way to use up your overripe bananas, this takes care of them nicely!

Gluten Free Peanut Butter and Banana Oatmeal Bars - Ingredients

Ingredients

2 ½ C old-fashioned rolls oats (not instant or quick oats)
¼ C brown sugar
1 tsp baking powder
½ tsp salt
1 tsp ground cinnamon
½ C milk
1 tsp vanilla extract
1 large egg
2 large ripe bananas, mashed
1/3 C creamy peanut butter
½ C semi-sweet chocolate chips
½ C peanut butter chips

To make these awesome bars (side note: I say they are awesome, but I don’t know for sure – I hate peanut butter, so I don’t eat them. I can only go by my kids’ and husband’s reactions, and they assure me they are awesome.), begin by preheating your oven to 350F degrees. Spray 8” x 8” square (or 9” x 9”) baking pan with cooking spray or line with parchment paper. Set aside.

Next, mix together oats, brown sugar, baking powder, salt, and cinnamon. Add in the milk, vanilla, and egg. Mix together until evenly combined. Add mashed bananas, peanut butter, chocolate chips, and peanut butter chips. Stir well.

Pour the mixture into the pan and bake for 20 minutes. Allow to cool and cut into bars.

This is really just such an easy recipe. It’s perfect if you want to let the kids help. They love to have a hand in making their own snacks, and this one will get them excited every time. It yields between 12 to 16 bars depending on how you cut them. And they have the DDM (Dexter, Daniel and Mark!) seal of approval! I’m sure the DDMC (Dexter, Daniel, Mark and Chester) seal will come eventually.
