Harry Potter Butterbeer Fudge

I’m on a total Harry Potter kick lately, and I’ve been obsessed with everything Butterbeer. As a lifelong fan of butterscotch flavor, the idea of a drink that is meant to taste somewhat like a less sweet version of that has always appealed to me. Plus, it just always screams FALL to me, and I can’t help but want to lean into it as the days grow cooler.
I’m also a big big fan of fudge recipes. I enjoy the tastes and textures of different versions of fudge, and I like adding new ones into the world. I think there’s something so great about a dessert that is so simple to make.
This particular recipe is RIDDIKULUSly (sorry, I had to) simple to make. It is only three ingredients that you probably already have in your pantry, but they are readily available at the grocery store if not. And there’s an optional fourth ingredient that I add just for whimsy. Hint – it’s sprinkles.

Okay, let’s get into it.
Ingredients:
- 11oz butterscotch baking chips
- 16 oz vanilla frosting (divided)
- 8 oz white chocolate baking chips
- Harry Potter-Inspired Sprinkles (optional)
Instructions:
First, line an 8 x 8 square pan with parchment or wax paper. Spray it with nonstick spray, then set aside.
Next, add the butterscotch chips to a glass bowl, and melt in the microwave in increments of 30 seconds. Stir as you go, being careful not to overheat or they will seize.
Once melted, add in 8 oz of the vanilla frosting.
Mix the two until they are fully blended with no streaks. Pour them into the pan and spread along the bottom. Use a second sheet of parchment to flatten it out.
Add the white chocolate chips to a bowl, and once again microwave for 30 seconds. Remove and stir, then microwave again for 30 seconds, stirring at the 15 second mark. If not fully melted, return again to the microwave for 10 seconds, being careful not to burn the chocolate.
Add in the last 8 oz of vanilla frosting, stirring together until there are no streaks.
Pour on top of the butterscotch fudge. You can use a toothpick or knife to swirl them together if you wish, or simply leave as is.
Use a piece of parchment to flatten. Then add your sprinkles if you have them.
Refrigerate for at least an hour before serving.
Once you are ready, simply pull from the baking dish by pulling up on the parchment paper to remove. You can then cut your fudge into whatever size you like. I usually cut into 1 inch squares, which gives me around 64 pieces of fudge. But you can go a little larger if you fancy it.
This fudge is very sweet and creamy, as well as a bit crumbly. It keeps its form very well thanks to the chocolate and butterscotch, but the frosting gives it a sort of pleasant crunch like you’d get on the edges of a birthday cake.
It’s definitely very rich, and one piece is plenty, so a little goes a long way. It’s a great treat for a party. I can see it working great for a Harry Potter birthday party or movie night, or even a Halloween party.
