If you’re a mom, it’s pretty likely that you have discovered the awesomeness that Cheerios™ bring to the table when you’re in need of a break from stress. Whether you remember indulging in them as a kid (my mom always added cut up strawberries to ours) or you’re only realizing now that they come in a multitude of flavors (far more than our limited choices of yesteryear), Cheerios™ are playing an important part in the happiness of my kiddos this summer. And yes, I’m totally serious!
It started with the Cheerio™ challenge, thought up by a bored dad with a sleeping baby. I literally ALWAYS have several varieties of Cheerios™ in my cupboard, so I tried my luck on my not-so-little-anymore babies and failed spectacularly.
But when my kids discovered they could play with their favorite foods, all bets were off. Suddenly they wanted me to come up with more fun projects for them. Inspiration struck hard – what about edible jewelry? My kids loved their introduction to candy necklaces, so I thought we could create a similar thing (though much healthier!) out of Cheerios™ and a bit of ribbon.
Using a coupon, I went and restocked my cupboard with various varieties of Cheerios™ (our favorites are Chocolate Cheerios™ and Honey Nut Cheerios™) and let the kids go to town by threading their cereal onto lengths of ribbon I cut for them.
Not only was it great fun for them, but it kept them quietly occupied for about twenty minutes, allowing me to get some work done! Score!
The final result was a big hit. Each child had worked hard to make a beautiful wearable treat. Their pride knew no end.
Of course, their hard work was IMMEDIATELY devoured, and I was suddenly presented with kids who had whetted their appetites and wanted MORE CHEERIOS™ FUN!
As I’d already been to Walmart to stock up, I figured we should make the best of our stash and use it for something truly awesome. After brainstorming, I took one of my favorite recipes and replaced one of the key ingredients with crushed Cheerios™. That’s how we ended up with these AMAZING Lemon Crunch Bars!
To make them, you’ll need:
1 box lemon cake mix
1 stick of butter (softened)
2 C crushed Cheerios™, Honey Nut Cheerios™ or Frosted Cheerios™
3 egg yolks
1 can sweetened condensed milk
1/2 C lemon juice
To make the bars, combine the cake mix, butter and egg until combined. Then add in the crushed Cheerios™.
Reserving 2 cups of the mixture, place the rest into a foil pain, pressing it into the bottom. Bake at 350 for 15 minutes.
Meanwhile, in a bowl, combine the 3 egg yolks, sweetened condensed milk and lemon juice. Remove the base from the oven, and pour the lemon mixture on top. Finally, crumble the remaining cake mix onto the top of that.
Place the whole thing in the oven once more for 25 minutes.
Once done, place the pan in the fridge for 2 – 3 hours. Then cut and serve!
The beauty of this recipe is that you can use different kinds of cake mix and different kinds of Cheerios™ to make different kinds of bars!
For instance, use chocolate cake mix and Chocolate Cheerios™ for the base, and substitute hot chocolate or espresso for the lemon juice! Or how about Fruity Cheerios™ with white cake mix and fruit juice? Or even Apple Cinnamon Cheerios™, spice cake and apple cider? The options are endless!
