I’m a huge fan of olive oil. I use it to cook pretty much everything. So when the good folk at Pompeian contacted me and told me about how their olive oil is the first and only extra virgin olive oil to carry the USDA Quality Monitored Seal, I knew it was a product I wanted to try.
I decided to make one of my favorite side dishes, which is the very delicious Loaded Smashed Potatoes. I used fingerling potatoes because they came in my weekly produce box AND they were super cute and colorful. I thought it would be fun.
The ingredients are simple.
2 lbs fingerling potatoes
1/2 red onion (chopped)
2 green onions (sliced)
3 cloves garlic (chopped finely)
3 slices bacon (chopped)
4 Tbsp parmesan cheese (grated)
1/4 C Pompeian Extra Virgin Olive Oil
1 C shredded cheese
Boil the potatoes in a big pot of salted water until fork tender. Remove from the water and lay out on a big cookie sheet.
Take a potato masher (or a fork… or your hand) and smash the potatoes right there. You don’t want them like mashed potatoes. Just a quick little smash to bring them out of their skins.
Once they are ready to rock, you can prepare the rest of the meal.
First, fry up the bacon bits until nice and chewy. Remove from the pan. Add in a Tbsp of Pompeian Extra Virgin Olive Oil and then the rest of your veggies. Fry them until they are nice and tender (about 2-3 minutes).
Then just drizzle and spoon the bacon and veggies over the top of the potatoes. Sprinkle generously with parmesan and your shredded cheese and bake at 400 degrees for about 20 minutes until the cheese is nicely melted.
When it’s time to serve it up, drizzle the whole thing with a little more olive oil and sprinkle with further green onion.
This is an utterly delicious meal, made all the better by the Pompeian brand.
