Mickey Mouse Cupcakes

by Katie Reed

Don't forget to share!

Did you know that on July 17th, 1955, Disneyland opened in Anaheim, California? That means that this Friday, the park is about to turn SIXTY years old! In honor of such an auspicious anniversary, we’ve created these Mickey Mouse Cupcakes to celebrate Walt and his amazing vision for the most Magical Place on Earth!

To all who come to this happy place: Welcome. Disneyland is your land. Here age relives fond memories of the past, and here youth may savor the challenge and promise of the future. Disneyland is dedicated to the ideals, the dreams, and the hard facts that have created America, with the hope that it will be a source of joy and inspiration to all the world.

Here’s what you’ll need for these Mickey Mouse Cupcakes:

2/3 C unsalted butter, soft
1 2/3 C sugar
3 eggs
2 C flour
2/3 C cocoa powder
1 1/4 tsp baking soda
1 tsp salt
1 1/3 C  whole milk
1 pack mini Oreos

Mickey Mouse Cupcakes

Preheat your oven to 350 degrees and then line your cupcake pan with paper liners.

Combine the flour, baking soda, salt and cocoa powder in one bowl. In another, cream together the butter with sugar until it is light and creamy. Add in one egg at a time, beating after each addition.

Add 1/3 of the dry ingredients and 1/3 of the milk into the creamed mixture. Beat until smooth and then add another third and the final third beating between each.

Scoop the batter into the lined cupcake tins and bake for 20 – 25 minutes or until a toothpick inserted in the middle comes out clean.

Cool in the cupcake pan for 10 minutes, and then remove from cupcake pan and cool on wire rack.

Choose your favorite frosting recipe and frost the top of your cupcakes in a nice swirl. I used a nice vanilla cream frosting, but the chocolate would be great, too.

Add two little mini Oreo cookies to either side of the frosting to create Mickey’s “ears.”

You can use a glue gun to glue two little buttons onto the front of a red cupcake liner to be Mickey’s pants.

Mickey Mouse Cupcakes

These are such cute little cupcakes, and they are perfect for celebrating Disneyland’s birthday! But they’d also be super cute for a kid’s Disney-themed party. Add a red bow to the top for Minnie Mouse cakes!

What a great idea to add the buttons! I must pass this recipe on to the baker in our family as I know I wouldn’t do it justice. But I will be first in line to sample!
