Perfect Peppered Personal Pizza
I have shared a ton of pizza recipes that are oh-so-perfect for family meal night. But sometimes when you’re all alone, you get the craving for a delicious slice of this yummy concoction, but you don’t necessarily want to make a huge pie you’ll end up not being able to eat. OR – sometimes you really want a special kind of pizza, but no one else likes the toppings you choose. I had this problem in my pregnancies – I craved spicy, flavorful pizzas that no one else wanted. So this serves as my reminder to all of you that there are a million options for a personal pizza.
Simply grab yourself a pre-prepared mini pizza crust and load it up with whatever you fancy! In fact, you can even let each member of the family create their OWN pizzas, so this can STILL be a great family meal!
Here’s my own special concoction.
Ingredients:
2 small prepared pizza crusts
1 cup of pizza or marinara sauce
1 cup shredded mozzarella
1 large heirloom tomato, sliced
1 large sweet onion, sliced
1 cup of kale, chopped
1 Anaheim pepper, sliced
1 cup Italian sausage, chopped
1 cup roast beef, sliced and chopped
Directions:
Preheat oven to 425 degrees. Spoon pizza sauce onto pizza crusts.
Add a generous amount of shredded mozzarella cheese
Add layers of your ingredients, starting with your veggies and then adding your meats.
Add more cheese.
Pile on sliced sweet onion, pepper and more cheese.
Bake in over for 11 – 15 minutes
Remove from oven, slice and serve.
This reminds me vaguely of a Philly Cheese Steak, but the tomatoes take it to a new level. I love the combinations of flavors within, as it lends itself to a gourmet meal without having to leave your house!
Sometimes I’ll even skip out on the pizza crust and use an Indian Nan bread or even a Pita bread instead!
And while I’m a HUGE fan of cheese usually, this particular pizza is delicious with only a small sprinkling. The other flavors are so good that you don’t need to go too heavy on the cheese!
All in all, it’s a fab little recipe any time you need it.
