Pumpkin and Oreo Mousse Parfaits
This time of year, we all know that everything we make or eat really needs to incorporate pumpkins. It’s like we have a quota or something. Not that I’m complaining, mind you. I’ll eat pumpkin any way I can get it. From desserts to soups to breakfasts to a snack, I’m ALL about the pumpkin!
And when considering a fun Halloween tablescape, I knew pumpkin would have to feature heavily. I already shared my delicious recipe for Pumpkin Banana Bread Mini Muffin Bites, so today I wanted to feature this gorgeous recipe for Pumpkin & Oreo Mousse Parfaits. Trust me – you’re gonna love it.
Ingredients:
- 1 box instant vanilla pudding mix
- 2/3 cup evaporated milk
- 1/2 tsp pumpkin pie flavoring
- pinch of allspice
- 1 cup pumpkin puree
- 1 1/2 cup whipped cream, plus more for the final layer (Cool Whip or a similar brand work fine)
- 1 1/2 C crushed Oreo cookies 10-12 cookies (for extra pumpkin goodness, you could use Pumpkin Spice Oreos instead)
- Several Candy Corn candies
Directions:
In the bowl of a stand mixer fitted with a whisk attachment, add one package of vanilla pudding/pie mix and 2/3 C of evaporated mix. On the lowest setting, whisk the ingredients.
Add 1/2 tsp of liquid pumpkin pie flavoring and a pinch of allspice, and then stop the mixer. Stir in a cup of pumpkin puree.
Add in your whipped topping and continue to mix the ingredients using medium speed until the mixture is light and fluffy.
Place the pumpkin mousse in the refrigerator. Then, in the bowl of a food processor, add Oreos and pulse until you have your desired cookie crumbles.
Using some nice glass dessert bowls (I love this set from Libbey!) spoon four tablespoons of pumpkin mousse into it and then three tablespoons of crushed Oreo cookies. Continue alternating the mousse and Oreos until you fill the bowls.
Top with an even layer of Cook Whip and garnish with a single Candy Corn in the center.
These look so cute served individually, however you could just as easily use a large trifle dish and create one gigantic bowl of it. However you choose to do it, the result is a very tasty dessert sure to please any pumpkin fan in your life.
