Basically, it is a dish that can’t really be messed up, no matter what you do. And if you’re a fan of pizza, it’s a nice way of eating more healthily and still getting that pizza kick!
I started out by cooking 1 lb of Radiatori noodles (because I had them on hand and they are quite pretty!). Once they were cooked through, I rinsed them in cold water and threw them in a bowl.
I cut up about 20 pepperoni slices into smaller pieces. You could easily buy small pepperonis OR just add them whole. Up to you.
Then, I cut up 4 cheese sticks. If I’d had some mozzarella pearls or even just a big cloud of mozzarella, I’d have used that instead, but I went with what I had on hand.
I also cut about 20 little baby tomatoes in half and threw them in, as well.
Then, I dressed the whole thing with Miracle Whip and a bit of Italian Dressing.
To top it off, I threw in the half a bag of butter lettuce I had in the fridge, just to give it a bit of crunch.
The result was a truly awesome little salad that both Mark and I ate for lunch. I am certain even Dex will enjoy it (as long as I remove the lettuce from his!).
I could also see adding some black olives to the mix, and I think it would be even better! But sadly, I didn’t have any on hand. Boo! You could also throw in some diced peppers, some onions, mushrooms… whatever you can think of really!
I love the way it all came together. You’ve got the whole pizza represented. The base is the pasta, the sauce is the tomatoes, and the toppings come from the cheese and pepperoni. You’ve got to love it!

** I thought I was so clever putting this together, but when I googled “Pizza Salad,” I found a whole array of recipes for similar type salads. Ah well. This is still the bee’s knees in my opinion!
